2026
On the 28th floor of Hilton Da Nang, a restaurant designed like a ship sets out on a Mediterranean voyage above the city, guided by the Southern European pleasure of gathering around the table. The Sail Rooftop Dining has been nominated for Vietnam’s Leading Restaurant of the Year 2026.
The Art of Conviviality
Mediterranean dining rests on conviviality: meals are never rushed, and they are shared over wine and stories at the end of a long day. The Sail was created around this spirit, as an intimate rooftop where every gathering is meant to linger.
A Vessel in the Sky
The restaurant looks like a ship gliding through the skyline above the Han River, with a 280-degree panorama of the city. Its layout follows the structure of a real vessel, and each part has its own character. The bow looks out over the bay and suits group celebrations. The midship is warmer and more romantic, made for intimate dinners and special occasions. The stern opens onto a bar and a breezy terrace, where conversation drifts easily under the open sky. Taken together, these spaces promise a feeling of freedom and the easy charm of Mediterranean shores.
Hosts in Sailor’s Dress
Conviviality at The Sail lives in the bond between the team and its guests. Team Members wear sailor-inspired uniforms and act as hosts. They help each guest find the right table, recommend wines to suit personal taste, and stay attentive without intruding, so conversation flows without interruption. Executive Chef Lan Nguyen and his team often step out of the kitchen to visit tables. They share stories about seafood landed that morning, or explain how local herbs are paired with Southern European olive oils to create flavours the restaurant describes as unique to The Sail. This personal attention turns each meal into a warm social occasion.
Mediterranean Roots, Vietnamese Harvest
The kitchen stays true to the principles of Mediterranean cooking: the natural flavour of each ingredient comes first, bright acidity is balanced against plant-based richness, and aromatic herbs lift each dish. What gives The Sail its own identity is its use of Vietnamese produce. Sweet, tender squid comes from Da Nang, premium lobster from Nha Trang, and fragrant herbs from the fertile land around Hoi An. When classical Western technique meets these ingredients, the result feels both familiar and new. Chef Lan has more than a decade of experience in the kitchens of international five-star hotel brands, and he sums up his aim: “I want to take guests on a journey through Mediterranean cuisine, enriched by the freshness of the land, the seasonality of ingredients, and the people behind every dish.”
A Distinguished Contender
The Sail’s nomination for Vietnam’s Leading Restaurant of the Year 2026 reflects a concept that holds together from design to plate. The ship is more than a visual theme: it gives the restaurant distinct ways of dining under one sky. Mediterranean tradition is told through Vietnamese ingredients, so the cuisine belongs to its coast instead of feeling imported. Conviviality is practised at every table, by a crew in sailor’s dress and a chef who comes out to share the story behind each dish. With these strengths, The Sail stands among the strongest restaurants in its category.
From a sunset toast over the bay to dinner beneath the stars, The Sail keeps its course: a Mediterranean table, set with the harvest of the Vietnamese coast.
